Our Favorite EASY Dinner Recipe!

Hey, friends! I know we’re all stuck at home right now and having to get creative with dinner since we can’t go out to eat. Today I’m sharing one of our favorite dishes that I make – Cheesy Chicken Broccoli & Rice! It’s super easy and makes plenty for leftovers! I probably cook this at least once a week! For those of you who are gluten free like me, this is something the whole family will enjoy because everything is just naturally gluten free. No special stuff!
What you’ll need:
  • Chicken (we normally get the tenders but regular chicken breast will work fine – you’ll be cutting it into small bites!)
  • Broccoli (we get the microwavable frozen broccoli – it cooks in 5 minutes and is the best!)
  • Shredded cheese
  • 1 cup rice
  • 2 cups chicken broth – make sure it’s gluten free (if you need that!) I get the Swanson brand.
  • Onion (optional!)
What you do:
  • Cut up the chicken into bite-size pieces and put them in a skillet. Cook them until they aren’t pink anymore.
  • Add 2 cups of chicken broth and 1 cup of rice. Let the chicken broth come to a boil and then put it on a lower/medium heat and let it simmer with the lid on for about 15 minutes or until the rice soaks up the broth and looks cooked. (**it will feel like it’s too much broth but it’s not!)
  • When the rice looks like it has soaked up most of the broth, go ahead and start microwaving the broccoli. Once it’s done, add it to the cooked rice/chicken in the skillet.
  • We’ve added a chopped onion before and it was good! This step is optional – sometimes we leave it out.
  • Add about half of the bag of shredded cheese and mix it in.
  • Add the rest of the cheese on top and put the lid back on the skillet until the cheese is melted.
