Orange Chicken + Fried Rice Recipe

If you know my husband, you know one of the hardest parts of this quarantine mess has been the Chinese restaurants being closed! Nobody loves Chinese food as much as Michael Moody 🤣
That’s why when I stumbled on this easy recipe on Pinterest, I had to try it! I’ve seen this recipe ALL OVER so I don’t know how I’m just finding out about it. It’s a simple, 4-ingredient ORANGE CHICKEN recipe! Full disclosure, I am not a huge orange chicken fan and this one was a little too tangy for me. But I also don’t love mixing sweet with savory (Michael LOVES doing that – so he loved this chicken!)
In our home, we make fried rice almost weekly. We actually pumped the brakes on fried rice lately because I was starting to get tired of it – that’s how much we make it! IT’S SO GOOD.
Today I’m sharing how to make the orange chicken and also how to make the fried rice that we always make.
ORANGE CHICKEN
What you need:
  • 1 lb chicken (I use the tenders – it doesn’t matter, you’re going to chop it up!)
  • 3/4 cup Sweet Baby Rays BBQ Sauce
  • Orange Marmalade – the recipe I found called for 3/4 cup, but I would do less. It was a little too orange-y for me!
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Teriyaki sauce
NOTE: I obviously have Celiac disease so I substitute in all of my Asian dishes this GF soy sauce and this GF teryaki sauce.
What you do:
  • Cut chicken into bite size pieces and start cooking them in a skillet.
  • While the chicken is cooking, mix BBQ sauce, orange marmalade, teriyaki sauce, and soy sauce.
  • After the chicken is mostly cooked (not pink anymore!), add the mixture to the chicken.
  • Cook for about 20 minutes on low heat, stirring occasionally.

FRIED RICE
What you need:
  • Rice
  • Onion
  • Teriyaki sauce
  • 4 eggs
  • Butter
What you do:
  • We have a rice cooker, so we always do 2 cups of rice + 4 cups of water in the microwave for 12 minutes. If you don’t have a rice cooker like that, just make rice however you normally do!
  • While rice is in the microwave, we chop up a whole onion and start sauteing it in another skillet.
  • Once onions are mostly cooked, add 4 eggs to the skillet and scramble them into the onions.
  • When rice is done, add the cooked rice to the skillet and mix everything together.
  • Add butter and teriyaki sauce to taste! We eat it with Yum Yum sauce, too. This is the kind we get!
