Parenthood has brought with it a delightful chaos of love, laughter, and, let’s be honest, a perpetual shortage of time and energy. Gluten Free Crockpot Chicken Chili is my favorite dinner to make when we need something easy!

It’s cheap, simple, and full of flavor – perfect for our current lifestyle. As new parents, we can’t slave over the stove all evening like we used to. Crockpot meals have proven to be our best option! I can prep the meal while my daughter naps and then when dinner time arrives our meal is ready.

Regardless of how our bedtime routine goes – we both know we will still have a hot meal!

What You Will Need To Make Gluten Free Crockpot Chicken Chili


  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tbsp chili powder
  • ranch packet
  • 2 chicken breasts
  • 2 cups chicken broth
  • 1 can corn (drained)
  • 1 can black beans (drained)
  • 1 can diced tomatoes w/ green chilies (not drained)
  • cream cheese
  • shredded cheese 


  1. Lay chicken breasts in crock pot
  2. Add corn, beans, tomatoes/chilies, seasonings, ranch packet, stir together
  3. Add cream cheese on top
  4. Close the lid and cook on high for 4 hours (or on low for 6-8 hours but who has time for that?!)
  5. Shred chicken with two forks
  6. Serve with cheese and sour cream on top!
